Blintzes with Salmon Caviar

Ingredients

3 cups 3% fat buttermilk
1 cup milk
1 level teaspoon baking soda
1 tablespoon sugar
1 egg
flour to desired consistency
pinch of salt
150 grams red caviar
butter or oil for pan

Directions

Pour the buttermilk and butter into a pot. Break the egg into the pot and then add the sugar, baking soda, and salt and mix together but do not beat. Add flour as you mix to get a consistency that is thinner than yogurt. Put a lid on the pot and set overnight in the refrigerator to chill. The following day, remove dough and shape blintzes on an oiled pan. The blintzes should be thin. Bake the blintzes 35-45 minutes at 350 degrees until lightly browned. If you make more than one batch, oil the pan between each. To serve, butter one side of each blintz and spread an even layer of red caviar. Then carefully roll the blintz and cut it in half with a diagonal slice. Garnish with basil.
